Ingredients

Serves 3-4 servings
  • 2 cupssoya chunks (about 100 grams)
  • 3 1/2 ouncespaneer, cut into cubes (about 100 grams)
  • Paste of 3-4 tomatoes
  • 1large onion, finely chopped
  • 3-4green chilies, finely chopped
  • 1-inch piece ginger, finely chopped
  • Salt, to taste
  • 1 1/2 teaspoonscoriander-fennel powder
  • 1/2 teaspoonred chili powder
  • 1 teaspoonturmeric powder
  • 1 teaspooncumin seeds
  • 1/3 teaspoongaram masala
  • 2 tablespoonsghee
  • 1 pinchasafoetida (hing)
  • 1 tablespoonheavy cream or malai
  • 1little chopped cilantro

Steps

  1. 1

    Rinse the soya chunks well and soak them in water for 2 hours. After 2 hours, squeeze and rinse them 2-3 more times. Then, blend them in a mixer without adding water to make a paste.

    Heat ghee in a skillet. Add asafoetida and cumin seeds, and sauté.

  3. 3

    Add the finely chopped onion and sauté until golden.

  4. 4

    When the onion turns light golden, add ginger and green chilies. Sauté, then add salt and all the spices.

  5. 5

    Add the tomato paste and cook until the oil separates.

  6. 6

    Once the tomatoes are well cooked and the oil separates, add the soya paste and mix well.

  7. 7

    Add 1 tablespoon of heavy cream or malai, cover, and cook for 4-5 minutes.

  8. 8

    Add the paneer cubes and garam masala. Sauté for 1 minute.

  9. 9

    Mix in the chopped cilantro and serve hot with roti or paratha.
