Sift flour & baking powder into a bowl

Add sugar, salt & lemon zest, & mix thoroughly

Add oil, eggs, milk, & lemon juice, & mix till thoroughly combined.

Add vanilla flavor lastly & mix till combined, do not over mix.

Divide batter into 2 8"prepared pans (this is to prevent the cake from imploding, always divide into 2 8" pans).

Bake for 30-45 minutes on low heat, you would know it's ready when the top springs back when touched or simply insert a skewer in the center, if it comes out clean then it's done.

It can be eaten on it's own, with a drizzle of lemon glaze, dusting of icing sugar, or frosting of choice
