Ingredients

  • Potatoes
  • Fresh spinach
  • Olive oil
  • Salt
  • Balsamic vinegar

Steps

  1. 1

    Boil potatoes in their skin, leave to cool then peel (I find this gives them more flavour, but peel, chop and boil if you fancy)

    Slice

    Then chop and put in a bowl

  4. 4

    Wash and dry spinach. Throw it in. Drizzle with olive oil, balsamic and sprinkle with salt. Mix and serve :)
