My friend sent me this recipe and I thought it sounded really interesting so I gave it a go. It's a nice twist on mashed potatoes which I really enjoyed. Please note on picture used I added too much milk and it should usually be much thicker. I add two vegetarian sausages and a side salad for a good, filling lunch. (Serves 4-6)

Ingredients

  1. 8potatoes peeled and quartered
  2. 50 gbutter
  3. 125 mlmilk
  4. 2avocados
  5. 2large garlic cloves
  6. to tasteSalt
  7. Pinchground pepper
  8. 1 tablespoonlemon juice
  9. 2 tablespoonsseasame seeds
  10. 4mint leaves (optional)

Steps

    Bring water to boil in large saucepan, peel and chop potatoes into quarters and put in boiling water for 20-25 minutes until soft

  2. 2

    While potatoes are boiling peel avacado and garlic cloves. Crush the garlic and bash avacado until it has a smooth, creamy texture. Add garlic + seasame seeds to avacado, a pinch of salt and table spoons of lemon juice. Chop Spring onions and mint leaves finely and put aside.

    Measure out the milk and butter and put to one side after 20-25 minutes. Drain potatoes and place them back into the saucepan, on low heat add your milk and butter and mash the potatoes until they are smooth. Add in your avacado mix and Spring onions and mint leaves and mix until it has all blended.
