So sweet and so spicy! This is one of my favorite Korean noodle dishes. So, when my 7 year old students decided they wanted to make this crazy easy Asian dish, believe me, I totally encouraged it! Serve with ice cold spicy Korean Kimchi, hot crispy Korean Spring Rolls and Hot & Sour Soup. Oh, and be sure to NEVER forget the frosty Asian beer in thick frozen mugs! ;0)

Ingredients

  1. ● For The Noodles
  2. 16 ozKorean Noodles [udon noodles work excelent as well]
  3. as neededHot Korean Chili Oil
  4. ● For The Bean Sauce
  5. 1 CupSmall Cubed Pork
  6. 1 CupKorean Black Bean Sauce
  7. 1/2 CupSmall Cubed Potatoes
  8. 1/2Medium White Onion [fine diced]
  9. 1/2 CupShitaka Mushrooms [halved]
  10. ● For The Sides
  11. as neededBoiled Eggs [halved]
  12. Diakon Radishes [toothpick cut - garnish - optional]
  13. Toasted Sesame Seeds [garnish]
  14. as neededHot Korean Chili Oil
  15. Spring Rolls [side dish]
  16. Chilled Korean Kimchi [side dish]
  17. as neededSoy Sauce [side]
  18. as neededSweet Chili Sauce [side]
  19. as neededSiricha Sauce
  20. as neededOyster Sauce

Cooking Instructions

  1. 1

    Sauté your pork, potatoes, onions and mushrooms in oil until cooked. Add bean sauce + water and simmer for 5 minutes longer. Stir regularly.

    Fully cooked bean paste sauce with pork and raw Korean Noodles pictured.

    In the meantime, bake your Korean Spring Rolls as per manufacturers directions. Usually 7 to 10 minutes. Or, until crispy. Turn rolls once. Feel free to also serve with my chilled DIM SUM Garlic Ginger or Sweet Chili Soy Sauce.

    Boil noodles as per manufacturers directions. Usually about 3 minutes or less.

    Drain noodles. Do not rinse. Add hot chili oil to noodles and mix immediately. Add noodles to individual bowls.

    Serve with hot bean sauce, sliced boiled eggs, chilled Korean Kimchi, crispy Korean Spring Rolls, chilled Sweet Chili Dip, additional sauces, light Soy Sauce and ice cold Asian Beer.

    One heck of a delicious chilled Korean Kimchi brand! Easily found at your local Asian market.

    Know this dish makes for excellent leftovers for work! Siricha sauce piled at the left side of this dish for mixing.
