I love this soup, it reminds me of the cold winters eating by the log fire with the family.
Steps

Add the onions, potatoes and carrots into a pot along with the water. Bring to the boil.

In the meantime, boil two eggs in a separate pot. Then set aside when cooked through.

Then add the olive oil, salt and stock cube and continue to cook for 15-20 minutes.

Once cooked, leave to cool for about 30 minutes then blend into a creamy mixture.

Add the sliced green beans into the creamy mixture. Bring to the boil and cook for another 10-15 minutes or until the beans are cooked through.

Check the seasoning before turning the heat off. Add more salt or olive oil if needed. If you find the soup too thick add a splash of water.

Peel the eggs and slice them then add into the soup and gently mix in. Enjoy!
