This is my own special recipe. I hope you enjoy it!

It's time to return to healthy eating, low in carbohydrates and calories. This recipe was given to me many years ago by a dear aunt. She used to make it with bone-in legs and thighs, but I prefer it with boneless chicken breast pieces. Her recipe was more by feel, but here I list my preferred measurements. It's a very tasty, easy, hearty, and nutritious recipe.

It's fall season and all I could find for pancakes with fruit in them were banana or blueberry filled. So I decided to make my own simple recipe using my sourdough starter and apples! As I make this recipe I will add tweaks and tips as needed. Enjoy!

There are several recipes like this. Ones using lamb or beef, or shepherd's pie and so on. I made my version using potatoes I had on hand and Sangen Pork from Hirata Farm via the Seikatsu Club. Because the recipe is so simple, the flavors of the ingredients really shine!If you season both the pork and the potatoes enough that you can eat either one on its own, the seasoning will be just right.
