Ingredients

  1. headFor cooking the
  2. 1whole beef head
  3. 5whole heads of garlic
  4. 8bay leaves
  5. 8whole allspice berries
  6. 4whole white onions
  7. 8whole cloves
  8. 1 handfulsalt
  9. For serving
  10. 4white onions, finely chopped
  11. 4 bunchescilantro, chopped and well washed
  12. 20limes, cut into wedges
  13. 11 lbscorn tortillas (about 5 kg)
  14. For the green salsa
  15. 4 1/2 lbstomatillos (about 2 kg, preferably field-grown if available)
  16. 20-30serrano peppers
  17. 4garlic cloves
  18. salt

    Fill a large steamer pot with hot water.

  2. 2

    Add the spices, vegetables, and salt—this is very important.

  3. 3

    Place the well-cleaned beef head inside.

  4. 4

    Cover with plenty of aluminum foil and a clean towel, then put on the steamer lid. Make sure it's sealed well so the steam doesn't escape. This will take 5 to 7 hours, but keep an eye on it because the water can dry up; if it does, add more hot water.

    The meat will become very tender and will come off the head easily. To remove the brains, you'll need a sharp cleaver.

    To make the salsa:

    Cook the tomatillos, peppers, and garlic cloves. Blend them together and add salt to taste.

    To serve:

    Finely chopped onions.

  10. 10

    Chopped cilantro.

    Lime wedges.

    Warm corn tortillas.

    Now enjoy tacos filled with eye, lip, cheek, meat, tongue, and brains...
