Rabbit baked after being marinated in a mixture of oil, chili peppers soaked in vinegar, and garlic. Served with lettuce, tomatoes, radishes, and green onions.

Remove the seeds and veins from the chiles, then soak them in warm vinegar. Once softened, blend the chiles with the garlic and a splash of olive oil.

Rub the cleaned rabbit inside and out with the marinade, season with salt and pepper, and let it marinate for a few hours or overnight. Place the rabbit on a baking tray in the oven or over hot coals.

Turn the rabbit to brown on both sides. Bake in a preheated oven at 350°F (180°C) for 20 to 30 minutes. Serve on a bed of lettuce, tomato, radishes, and green onions.
