Ingredients

Serves 4 servings
  1. tortillas
  2. 1 cupcorn flour (about 120 grams)
  3. 2 tablespoonsall-purpose flour (about 16 grams)
  4. 1 cupwarm water (about 240 ml)
  5. 1 pinchsalt
  6. for the shrimp
  7. 1 1/2 cupscleaned shrimp (about 225 grams)
  8. 2 tablespoonsbutter (about 28 grams)
  9. 1green bell pepper
  10. 1/4onion, sliced
  11. 1 clovegarlic
  12. 1 pinchsalt
  13. 1 pinchoregano
  14. 1/2chicken bouillon cube
  15. 1/2 cupmelting cheese (such as Monterey Jack or mozzarella, about 60 grams)
  16. avocado or guacamole
  17. hot sauce, to taste

    To make the tortillas, warm the water slightly and add the salt. Gradually mix in the flours with a fork until combined. Let the dough rest for 5 to 10 minutes, then form balls of your desired size. Use a tortilla press or a heavy object to flatten them.

    For the filling: Slice the garlic, onion, and bell pepper into strips. Chop the shrimp.

  3. 3

    Heat the butter in a pan and lightly sauté the garlic, onion, and bell pepper. Add the chopped shrimp, then sprinkle with a pinch of oregano, salt, and half a chicken bouillon cube.

  4. 4

    Crumble the cheese and stir it in until melted. Remove from heat and serve the filling on warm tortillas. Top with avocado and hot sauce.
