Ingredients

50 minutes
Serves 4 servings
  • 1.1 lbspork (preferably ribs for best flavor)
  • 1/2onion
  • 1/2yellow chili pepper or pickled chili pepper
  • 1/2 cupgreen peas (about 75 grams)
  • 1/2 cupcarrot, diced (about 65 grams)
  • Juice of 1/2 lemon
  • 1large packet mild aji panca paste (about 2 tablespoons/30 grams)
  • 2 clovesgarlic, minced
  • 3 cupsrice (about 570 grams)
  • Salt and pepper to taste
  • MSG (optional)
  • For the onion salsa:
  • 1onion, thinly sliced
  • Chopped chili pepper
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1drizzle of oil (optional)

    Cut the pork (preferably ribs, as used for chicharrón) into pieces. Marinate with salt, pepper, and lemon juice for about 30 minutes, or while you prepare the other ingredients.

    In a pot, heat oil and brown the pork on all sides. Remove the pork and, in the same pot, sauté the diced onion until softened.

    Add the chopped chili pepper, and after a few minutes, add the garlic, salt, pepper, MSG (if using), and the aji panca paste. Cook the mixture until the seasoning is ready (you'll know it's done when it thickens and bubbles on the spoon).

    Add the diced carrot and hot water. Return the pork to the pot and cook until the pork is tender.

    Remove the pork (this helps the rice cook up fluffy). Taste and adjust the salt—it should be a bit salty. Add the rice and green peas, and cook. When the rice is done, return the pork to the pot to warm it through. The dish should be slightly oily.

    If you like, serve with Onion Salsa.

    For the onion salsa: Rinse the sliced onion with salt, place in a bowl, and add salt, pepper, lemon juice, chopped chili pepper, and a drizzle of oil. Let it marinate for about 10 minutes.

Soy ama de casa, el tiempo pasó y mis hijas ahora ya trabajan, lo que significa que ya no están mucho tiempo en casa, ahora cocino prácticamente para dos por eso mis recetas son como para 3 ó 4 personas, pero ya saben que aumentando alcanza para más . Espero que les gusten, se las doy con mucho cariño, la mayoría me las enseñó mi mamá, así que siempre recurro a ella cuando tengo alguna duda, así al final todo les va a quedar rico. No me animo a hacer postres porque no me salen muy bien pero voy a tratar hasta que lo logre.Besos.
