Fry courgette in a little oil until golden brown on both sides, you may need to do this in batches. Set a side. Turn oven on to 180

In an oven dish, layer up. Passata, courgette, mozzarella, breadcrumbs, Parmesan, salt, basil. Finish with another layer or 2 until ingredients used up. Finish the top off with a good amount of Parmesan and breadcrumbs

Bake in the oven for about 35-40 mins. Leave to rest for 10 mins before serving :)
