Slice the mushrooms and fry in the olive oil. Top tip is to add a couple of tbsps of boiling water to the pan. It’s gets the mushrooms sizzling and cooking without having to add loads of oil which the mushrooms just soak up. Add a generous sprinkle of paprika and leave to sizzle gently while you toast the bread.

Toast the bread then spread it with avocado crushed with a fork. Then top with the mushrooms and season with salt and pepper.
