Whisk flour together, baking powder and salt. Set aside

Beat butter until light and fluffy for 2 minutes. Add in the sugar and beat on medium high until light and fluffy

Reduce speed and add in 1 egg at a time and mix until just blended

Add in vanilla, 2 Tbsp of lemon juice and milk and mix for 30 sec on low

Slowly add in dry ingredients and mix until just combined

Remove from mixer then fold in lemon zest with spatula

Divide batter evenly among prepared muffin cups

Bake until tops are just dry to touch, 18-20 minutes at 160°
- 9
Eat while slightly warm. Enjoy!
