Name: Sausage and potato soup

Ingredients: 1/2 cup diced onions; 1/2 cup diced carrot; 2 garlic cloves diced; 1 lb Smoked turkey sausage; 6 cups homemade vegetable stock or store bought; to taste salt and pepper; 1 bunch spinach; 2 Tbsp fresh thyme; 1 lb tiny potatoes whole unpeeled; to taste salt and pepper; 1-2 Tbsp fresh parmesan cheese

Steps

On medium heat add olive oil, onions and carrots, cook stirring about 5 minutes. Add sausage and potatoes. Stir for 2 minutes then add broth. Bring to boil then reduce heat to low about 30 minutes. Enjoy
