I thought, Califlower = Rice, Rice Pudding = Desert. So why not make these equal each other. I searched online for a recipe and found one.

Ingredients

  1. 1 packagefrozen cauliflower (15 oz) - 125 calories
  2. 2-3 teaspoonsCinnamon
  3. 1 cupcashew milk (unsweetened) - 25 calories
  4. DashNutmeg
  5. At least 2 packets of artificial sweetener of your choice
  6. 1/8 teaspoonXanthan Gum (optional)

Cooking Instructions

    Microwave the Cauliflower for about 6 minutes

  2. 2

    Throw Cauliflower in Food Processor and Pulse 3 times. Clean the Sides and Pulse again. Get it to a 'big rice' textures

  3. 3

    Mix the ingredients together, if you have the xanthan gum, you can use it to thicken it up a bit more if you want.

  4. 4

    I would refrigerate for about an hour before serving (perhaps even up to a day).
