Mastani Chat is an Indian evening snack recipe. It is prepared by using shallow fry pea patties, sweet and sour orange dip, hung curd, with grilled paneer slices, garnished with spices, julienne carrots, beetroots, citrus zest, pomegranate seeds, nylon sev and mint leaves. It can be served as a snack, a side dish or a light meal. So let us now proceed to check the ingredients required and the method of making the very very delicious Mastani Chat.

Mastani Chat is an Indian evening snack recipe. It is prepared by using shallow fry pea patties, sweet and sour orange dip, hung curd, with grilled paneer slices, garnished with spices, julienne carrots, beetroots, citrus zest, pomegranate seeds, nylon sev and mint leaves. It can be served as a snack, a side dish or a light meal. So let us now proceed to check the ingredients required and the method of making the very very delicious Mastani Chat.

Heat a non-stick saucepan, add orange juice, black peppercorns, cardamom, clove, star anise, nutmeg powder, cinnamon stick, boil it on medium heat for 10 to15 mins and stir this continuously. After 15 mins add sugar and black salt, mix well. Cook for 2 to 3 mins, off the flame. Cool it completely and pour this sweet and sour orange chutney into a glass jar and keep this jar inside the refrigerator. You can store this chutney for about 2 weeks.

Bring a blender jar, add green chillies, garlic, sugar, ginger and salt, blend this. Now add mint leaves, coriander leaves, lemon juice, curd, black salt and ice cubes, blend into smooth mixture. Pour this into a glass jar. Green mint chutney is ready.

In a mixing bowl, add hung curd, sugar and salt, mix well to get a creamy texture. Bring a bowl, add half in the bowl, add mint chutney and mix well. Bring 2 piping bags, in one piping bag add plain curd and in another bag add mint flavoured curd and keep this into the refrigerator.

Making Tikki:: In a mixing bowl, add coarsely crushed peas, grated paneer, mashed potatoes, cornflour, green chillies, ginger paste, coriander leaves and mix well. Add all the dry ingredients in this mixture, mix well. Divide the mixture into equal portions and shape them into round tikkis. Heat sufficient oil in a non-stick kadhai and shallow fry the tikkis, a few at a time, till golden brown. Drain all the tikkis on absorbent paper. Tikkis (patties) are ready. Mastani Chat is ready to serve.
