Story:: My Innovative recipe
Mastani Chat is an Indian evening snack recipe. It is prepared by using shallow fry pea patties, sweet and sour orange dip, hung curd, with grilled paneer slices, garnished with spices, julienne carrots, beetroots, citrus zest, pomegranate seeds, nylon sev and mint leaves. It can be served as a snack, a side dish or a light meal. So let us now proceed to check the ingredients required and the method of making the very very delicious Mastani Chat.

Ingredients

  1. For Tikki:
  2. 1 and 1/2 cupsFrozen green peas (boiled And coarsely chopped)
  3. 1/4 cupGrated paneer
  4. 1/4 cupBoiled mashed potatoes
  5. 2-3 tbspCorn flour
  6. 2 tbspFinally chopped green chillies
  7. 2 tbspGinger paste
  8. 3 tbspFinally chopped coriander leaves
  9. 2 tbspGaram masala
  10. 1 tspRoasted cumin powder
  11. 1 tspFennel powder
  12. 1/2 tspWhite pepper powder
  13. 2 tspCoarsely ground black pepper powder
  14. 1 tspBlack salt
  15. 1/4 tspTurmeric powder
  16. to tasteSalt
  17. as requiredOil for shallow frying
  18. ForFor Mint Chutney ::
  19. 1 cupMint leaves 1cup
  20. 1 cupCoriander leaves 1 cup
  21. 3-4 piecesGarlic cloves
  22. 3 piecesGreen chillies
  23. 1 inchGinger
  24. 2 tbspLemon juice
  25. 2 tbspCurd
  26. 1 tspSugar
  27. to tasteSalt
  28. 1/4 tspBlack salt
  29. Few ice cubes
  30. For Curd::
  31. 2 cupsHung curd
  32. 2-3 tbspPowder sugar
  33. 1 pinchsalt
  34. 3 tbspGreen mint chutney
  35. ForSweet and sour orange chutney :
  36. 600 mlOrange juice
  37. 6 tbspSugar
  38. 5 piecesBlack pepper corns
  39. 2 piecesCardamom
  40. 2cloves
  41. 1 piecestar anise
  42. 1 inchCinnamon Stick
  43. 1/4 tsp + 1 pinchBlack salt
  44. 1/4 tspNut meg powder
  45. ForGarnishing ::
  46. fewGrilled paneer slices
  47. as neededThin julienne carrots (3 cm)
  48. as requiredThin julienne beetroots (3 cm)
  49. as requiredJulienne citrus zest (3cm)
  50. as requiredPomegranate seeds
  51. someMint leaves

Cooking Instructions

    Heat a non-stick saucepan, add orange juice, black peppercorns, cardamom, clove, star anise, nutmeg powder, cinnamon stick, boil it on medium heat for 10 to15 mins and stir this continuously. After 15 mins add sugar and black salt, mix well. Cook for 2 to 3 mins, off the flame. Cool it completely and pour this sweet and sour orange chutney into a glass jar and keep this jar inside the refrigerator. You can store this chutney for about 2 weeks.

    Bring a blender jar, add green chillies, garlic, sugar, ginger and salt, blend this. Now add mint leaves, coriander leaves, lemon juice, curd, black salt and ice cubes, blend into smooth mixture. Pour this into a glass jar. Green mint chutney is ready.

    In a mixing bowl, add hung curd, sugar and salt, mix well to get a creamy texture. Bring a bowl, add half in the bowl, add mint chutney and mix well. Bring 2 piping bags, in one piping bag add plain curd and in another bag add mint flavoured curd and keep this into the refrigerator.

    Making Tikki:: In a mixing bowl, add coarsely crushed peas, grated paneer, mashed potatoes, cornflour, green chillies, ginger paste, coriander leaves and mix well. Add all the dry ingredients in this mixture, mix well. Divide the mixture into equal portions and shape them into round tikkis. Heat sufficient oil in a non-stick kadhai and shallow fry the tikkis, a few at a time, till golden brown. Drain all the tikkis on absorbent paper. Tikkis (patties) are ready. Mastani Chat is ready to serve.
