For a weekend change from rice, I made stir-fried beef vermicelli for the whole family. It's quick to prepare and never gets boring. This dish reminds me of enjoying it in a coastal hometown, and when I tried making it myself, it turned out pretty tasty.

For a weekend change from rice, I made stir-fried beef vermicelli for the whole family. It's quick to prepare and never gets boring. This dish reminds me of enjoying it in a coastal hometown, and when I tried making it myself, it turned out pretty tasty.

Marinate the ground beef with steak seasoning and dried oregano. Dice the onion and mix it into the beef to let the flavors absorb. Peel the jicama, slice thinly, then dice into small cubes.

Heat a skillet and sauté onions, then add the jicama and stir-fry until softened. In another skillet, stir-fry the beef until fragrant and cooked through, then add the jicama mixture and stir together. Taste and adjust seasoning as needed.

Prepare a small bowl of fish sauce with garlic. Rinse and chop the bean sprouts and salad greens. Place the vermicelli noodles in a bowl, top with the stir-fried beef, vegetables, and crushed peanuts. Serve with a small bowl of fish sauce and enjoy.
