Parmesan chilli duchess potatoes swirl with red pepper sauce

Take a bowl add grated boiled potatoes.

Add the ingredients salt, black pepper, grated cheese, chives, cream, butter, nutmeg powder, red chilli, corn flour, chilli flakes and mix just to combine.

Place the potato mixture into a piping bag with a star nozzle. Pipe and make small mountains.

Bake in a preheated oven at 220ºC for 20 minutes or until golden brown.

Roast red pepper on a gas stove until the skins are blackened. peel off the skins with a fork. Slice the peppers and discard all the seeds then roughly chop the red flesh.

Heat the olive oil in a frying pan. When hot, fry the garlic and onion for a few mins. Add the chopped peppers and continue to fry for a few mins, stirring to combine everything.

Pour the contents of the pan into a blender and whizz until smooth. Adjust the seasoning to taste. add sugar to taste and let it dissolve over the heat. Serve hot.
