I make this way too often because it’s easy.

Roughly chop up an onion, add garlic and chilli (dried, powdered or fresh) and fry until a bit soft.

Chop up all your other veg, then add them to the pan and fry a bit until there are some golden edges.

Add the tin of chopped tomatoes and the tomato puree, and an amount of basil and oregano that seems like too much, as well as the bay leaves. Stir em in.

Pop some pasta on to cook.

Almost forgot the beans! You can add them in whenever, really. So long as they’re heated through.

Serve! Remember to take the bay leaves out before plating up. Sprinkle some cheese or yeast flakes on top for extra noms.
