My diabetic sister lives 900 miles away. With her knowledge of all things diabetes/keto(low to no carb) and my baking skills, we came up with this pie. I was dying for her to have something rich sweet and creamy without killing her or making her have to take insulin. She was amazed with what we came up with. We did it all over the phone lol she said it’s very rich and very delicious and not even enough carbs to count , if any!

Ingredients

  1. 2 1/2 cupsfull cream
  2. 1 1/2 cupspowdered artificial sweetener
  3. 6egg yolks
  4. Vanilla
  5. 1/4 tspsalt
  6. 4 ozcream cheese
  7. A fewunsweetened chocolate pieces
  8. crust:
  9. 1/2 cupcoconut flour
  10. 1/2 cuppowdered artificial sweetener
  11. 1/4 cupcocoa powder
  12. 1/2 cupmelted butter
  13. 1/4 tspsalt

Cooking Instructions

  1. 1

    Preheat oven to 350. Mix all crust ingredients and press in pie dish. Bake for a few minutes until set.

    Mix first five of the custard ingredients in a saucepan and bring to a boil on medium heat. Add cream cheese and a few chocolate pieces and allow to melt. She said she swirled in a few chocolate pieces. Allow custard to cool just a bit. Pour custard into pie crust and allow to refrigerate til completely cooled.

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
