Wash the amaranth seeds and potatoes, then boil them. If there is extra water left with the boiled amaranth, drain it off.

Heat ghee in a skillet. Add cumin seeds, chopped green chili, and curry leaves. Sauté until fragrant.

Add the boiled amaranth, potatoes, and coarsely ground peanuts. Sauté for a few minutes.

Add rock salt to taste and black pepper powder. Cook for 2 minutes. Finally, add lemon juice and cilantro.
