Rice and eja dudu stew

Rice and eja dudu stew
Steps
- 1
Blend all the pepper and onions using a manual grinder or electric grinder, do not make it fine grinded but coarse.
- 2
Pour the above into the pot, ensuring there is some water in it to allow cooking of the pepper. Add all your seasonings to it and the tin tomato
- 3
When the water is almost gone from the pepper take it off fire. Now get oil(any type) and fry diced onions in it, when it starts frying, pour it into the cooked pepper from above.
- 4
Allow the cooked pepper to get fried properly for about 10 minutes ensuring the oil is enough to avoid burning it. After frying it properly take it off fire.
- 5
Take your eja dudu (black fish) and rinse it properly with cool water. Add the fish to your cooked and fried stew and then add some water to it. Put it on fire so the stew can simmer into the fish for about 5/10 minutes.
- 6
Avoid the temptation to eat the fish before the rice gets done. Cook your white rice normally and then serve and eat.
