Ingredients

4-5 servings
  1. ForWhole spices:
  2. 2 tablespoonscoriander seeds (Dhania)
  3. 2dried red chilies (OPTIONAL)
  4. 1 tablespoonsBlack Pepper (Kali Mirch)
  5. 1 tablespoonsCumin seeds (Jeera)
  6. 2-3 tablespoonsOil
  7. 2Medium Onions, sliced
  8. 3Small tomatoes, sliced
  9. 1 inchGinger, julienned, divided (adrak)
  10. 1/4 tablespoonGaram Masala
  11. 1/4 tablespoonKashmiri red chilli powder
  12. as per tasteSalt
  13. 1/4 tablespoonturmeric (haldi)
  14. 1 tablespoonKasuri Methi
  15. 1/2green Bell Pepper (capsicum)
  16. 1/2yellow bell pepper
  17. 1/2red bell pepper (red & yellow bell pepper is optional)
  18. 250 gramsPaneer (cottage cheese)
  19. For garnishing:
  20. as requiredWhole masala as per taste
  21. as requiredCoriander leaves

Cooking Instructions

    Cut Cottage cheese(paneer) in cubes, cut yellow, green and red capsicum. Along with that cut onions and tomatoes.

    Keep a pan on flame, add 1 tsp oil in it. Once hot, add 1/2 onions in it. Fry the onions well.

    Now add garlic and tomatoes, add salt as per taste. Salt will make tomatoes soft.Mix it well for 1-2 minutes.

    Once tomatoes are soft, off the flame and take this mixture out in a bowl. Let it cool down. Once cool down, grind it into a thick paste.

    Meanwhile in the same pan add 1 tsp oil,now add Cottage cheese and roast it from broth side until brown in colour.

    Once brown, take it out and in the same pan add the bell peppers(green, red and yellow). Fry it until soft.

    Once soft, take it out.

    In a pan, roast corinder seeds, dry red chillies, black pepper and cumin seeds until aroma is there.Then, take it out in bowl and let it cool down.

    Once the whole spices are cool, add them in grinder and grind it into powder form.

    In the same pan, add 1/2 cup left onions, saute it untill brown.

    Add fried Cottage cheese and bell peppers, mix it well. Now add all the spices, Salt to taste,red chilli powder, turmeric powder, coriander powder, kashmiri red chilli powder, garam masala powder and fengreek leaves. Mix it well and cook it at high flame.

    After that add the onions and tomatoes paste in it and mix it well. Cook for 2 minutes at medium flame.

    After 2 minutes, mix it well for 1 minute. Now add the whole grinded spices in it.

    Our kadai paneer is ready, garnish it with coriander.Serve it hot with chapati, naan or parantha.
