Handvo is a Gujarati savoury cake made with bottleguard, lentils and rice, savoured with evening tea or as snacks.

Mix Rice and all the daals together. Wash and soak for about 4 hours.

After 4 hours drain the mixture, add dahi and blend to a smooth paste.

Cover the mixture and let it ferment overnight at room temperature. (You can add 1 tbsp Eno / fruit salt for instant fermentation and skip overnight soaking).

In the morning, add grated carrot and bottleguard, spices as per your taste. And mix well.

In a big wok (kadhai) add oil, mustard seeds and Curry leaves and let it sputter.

Add the mixture and cover it. cook on slow for about 13-15 mins.

Using a plate, reverse it in the kadhai, and cook for another 10-12 mins on slow heat.

Take it out in a plate, cut in pieces and set it hot with any chutney or as is.
