This is one of the famous foods from the state of Gujarat that I love to cook & serve my family .Though I am from South the Gujarati cuisine has always attracted me with the variety of dishes the people have in this state.Easy and very healthy.
Khandvi rolls are very soft and they just melt in your mouth.It is made with gram flour which is - The main ingredient.☺
But here I have given a small twist , I have just added a little spicy cheesy Mexican flavour inside the khandvi rolls.

But here I have given a small twist , I have just added a little spicy cheesy Mexican flavour inside the khandvi rolls.
Steps

In a bowl put the buttermilk,salt and turmeric powder and whisk it well.

Now grind the green chilli,ginger in a matar and pestle.

Put it in the buttermilk,then add the gram flour and oregano.

Add the required quantity of water and whisk well so that no lumps are there.

In the meantime grease the back of some steel plates with little oil and keep it aside.

Now heat a non stick pan,put oil when hot, slowly pour in the gram flour mixture and stir continuously or else it will stick to the bottom of the pan.This mixture starts getting thick

Now test it by putting a little cooked gram flour mixture on the plate,if you are able to spread it then it means it is cooked fully.Or else cook it for a few more minutes.Turn off the gas.

Now quickly pour some mixture on the greased plates and spread it in circular motion just like a dosa.

Similarly spread this mixture on the remaining plates.

Now put some cheesy chipotle sauce on this and spread it all over the khandvi.

Now take a knife and cut into long strips (use the back of the knife)

Now carefully roll each strip into small tight rolls

Then take a tadka pan,put oil and when hot add in the asafoetida (hing),mustard seeds and chopped green chilli if you want it spicy.I skipped it as the chipotle sauce was spicy enough for our family.

Now pour this tadka over the khandvi rolls.Garnish with chopped coriander leaves and grated coconut.

Serve immediately.Enjoy with tea or coffee.
