A great way to eat this lovely seasonal vegetable. I seasoned generously with rock salt and dipped them into mayo 😋 A good recipe for veg-loving students as there are so few ingredients #oxfordstudents

If your celeriac has a wordy core, remove that. Then chop your veg into large chips.

Boil in salted water for about 10-15 mins until nearly cooked though but still reasonably firm in texture. Drain and allow them to steam dry in a sieve above the hot pan.

Heat a baking tray in the oven at 200 C. Add a good few glugs of olive oil, then add your chips. Season with pepper and roast until crispy, turning one or twice during cooking. Mine took a good 45 minutes.

Season with salt and serve immediately.
