Ingredients

40 mins
3 servings
  1. 10 oztomato juice
  2. 10 ozground beef
  3. 8 ozblack beans
  4. 4 ozcorn
  5. 1/4 cuptomato
  6. 1/8 cuponion
  7. 1jalepeño
  8. 1 1/2 tbspground cumin
  9. 1 tspcayenne pepper
  10. 1 tspground black pepper
  11. 1/2 tspsalt
  12. 1/4 tsponion powder
  13. 3 tbspsour cream

Cooking Instructions

40 mins
  1. 1

Cook beef in frying pan to 155°F, adding black pepper, salt, and 1/2 tbsp cumin.

  2. 2

Dice 1/4 cup tomato, 1/8 cup onion, and jalepeño.

  3. 3

I use canned beans and corn to save time, so drain all liquid and set aside 8 oz black beans and 4 ounce corn.

  4. 4

When beef is done cooking, reduce heat to simmer. To make healthier, you can strain out the grease, but I leave it in.

  5. 5

Add tomato juice, jalepeño, tomato, onion, corn, and beans to pan. Sprinkle remaining cumin and the cayenne pepper over chili.

  6. 6

Cover, and stir occassionally. Let simmer for 20 minutes. Serve in bowl with sour cream on top.

After spending years working in restaurants, although almost entirely self-taught, I decided to move on with my life. Every recipe I post on here is made in my one bedroom apartment in St. Paul, MN, photographed on my table, and then eaten. These are intended to be low-calorie options for people to cook and still enjoy food to the fullest. :)
