Ga kho gung - ginger molasses chicken shortcut

My husband and toddler are both picky. Hubby won't eat meat on the bone and doesn't like dark meat chicken. Toddler thinks slices of ginger are spicy. So traditional Vietnamese ga kho gung with bone-in chicken thighs and lots of sliced ginger won't work in our house. I came up with this lazy riff on it and got both hubby and toddler approval.

Heat pan on med/high and spray cooking oil. Put in molasses, ginger, and garlic. Let it get a shade or two darker without burning.

Add fish sauce and ground chicken. Cook while breaking up with spatula. 10 min

Add squash and stir occasionally until chicken is fully cooked. Serve over rice.
