Grape must pudding (moustalevria) is a traditional Greek dessert, very popular right after the harvest season, when there is plenty of fresh grape must available! The grape must is freshly crushed grape juice that contains the skins, seeds, and stems of the fruit.
In order to make this pudding you need to use clarified must from the supermarket. If you use fresh must which is not clarified yet instead you may do it yourself by bringing the must to a boil in a big pot, skimming off the foam as it rises to the top and then adding pure wood ashes to the must (1 tablespoon of ashes to 2 litres of must). After a few minutes of boiling you leave the must a few hours to rest and then strain it with a very thin cotton cloth. This way you will remove the grape sediment as well as the ashes completely.
Grape must pudding is gelatinus and has a natural sweetness so no added sugar is needed!

Ingredients

  1. 7 glassesclarified grape must
  2. 1 glassall purpose flour
  3. water (optional)

Steps

  1. 1

    You sift the flour to remove clumps.

  2. 2

    In a large pot you pour 4 glasses of grape must and you bring it to boil. If you believe the must is too thick you dilute it with a little water.

    You pour the rest of the must (which is cool) and the flour in a μιχινγ bowl and you stir the mixture using a whisk or a pimer to create a batter.

  4. 4

    After the must comes to a boil you add the batter of flour and cool must to the pot and you keep stirring with a mixing spoon until it thickens and becomes creamy.

    You remove immediately the pot from the stove to avoid clumps in your creamy pudding.

  6. 6

    You serve the grape must pudding in a plate or a bowl and you sprinkle with cinnamon, sesame seeds or both!

    When the pudding reaches room temperature, put it in the refrigerator. It is very refreshing to taste it cool!
