30 minute one pot chili

A fast kettle full of chili in 30 minutes! Can be frozen or kept in the fridge for about 5-7 days. Somewhat spicy with the sugar added to reduce acidity. Corn can be added to stretch it out more as well. It’s great alone or paired with corn bread, crackers, oyster crackers or topped with cheese, sour cream and green onion. You can also serve on top spaghetti or any pasta for chili Mac. You can leave out the mushrooms or anything spicy if you want a mild kid friendly chili. This is perfect for autumn or winter weather.

Ingredients

Makes a large kettle full
  • 1 canall the following:
  • Chili beans
  • Great northern beans
  • Kidney beans
  • Black beans
  • Hominy (optional)
  • 1 lbground beef or ground venison
  • 2 packetschili seasoning
  • 2 canstomatoes with green chiles
  • 1small can tomato paste
  • 1/4 cupsugar
  • 1 tspgarlic
  • 1 tsponion powder
  • 1 tspcrushed red pepper flakes
  • 1/2 cupfinely diced onions
  • 1/2 cupfinely diced mushrooms- any kind
  • 8 cupsv8 juice (regular or hot and spicy)

Steps

  1. 1

    Cook and drain ground beef or my favorite ground venison because it’s lean and better for you. Add in onion and diced mushrooms and cook on medium for 5 minutes.

  2. 2

    Mix all beans, tomato paste, v8, Canned tomatoes and Chiles, and dry spices and cook on medium heat for 20 minutes. Enjoy!
