Ingredients

30 mins
4 servings
  • 1large or 2 small onion(s)
  • 1large chunk of ginger
  • 5-6 clovesgarlic
  • 1red or green fresh chilli (optional)
  • 1 lbchicken
  • 2 tablespoonstikka masala spice mix
  • 1large squirt of tomato puree
  • Cherry tomatoes (puréed) or a can of tomatoes
  • 1 punnetmushrooms, sliced
  • 1red pepper, seeded and chopped
  • 1 cancoconut milk
  • to tasteSeasoning
  • 1 tablespoonoil of choice

Steps

30 mins
  1. 1

    Purée onion garlic ginger and chilli in a food processer

  2. 2

    Fry onion mix in oil of choice until softened

  3. 3

    Add chicken

  4. 4

    Fry chicken until browned

  5. 5

    Add spice mix and fry for a minute or so

  6. 6

    Add all remaining ingredients plus seasoning, bring to the boil and simmer for 20 mins or so
