Sick of seeing apples lying around and bored of munching on them the same old way; I decided to make an apple cake instead.

I prefer them being made of atta since I'm allergic to maida and I prefer my toddler eating healthy... And healthy doesn't always mean bleh! It's soft, it's delicious, best had warm with coffee or tea or maybe a scoop of ice cream

Ingredients

  • 2large apples
  • 2ripe bananas
  • 2eggs
  • 1 tspbaking soda
  • 1 tspbaking powder
  • 2.5 cupsatta/wheat flour
  • 1 tbspcinnamon powder
  • 1 tspsalt
  • 1 cupbrown sugar
  • 1/3 cupoil
  • 1 cup+ 1 tbsp milk + white vinegar
  • 1/2 cupnuts of your choice
  • 1 tbspvanilla essence

Steps

  1. 1

    Wet ingredients prep - throw in your eggs, milk, oil in the blender and give it a whir. To that, now add your banana and give it another whir.

    Dry ingredients prep - combine your atta, baking soda, baking powder, cinnamon powder in a bowl and give it a mix. There is no need to sieve them.

  3. 3

    Apples - clean them, cut them into halves and remove the core. There are 3 ways to cut them; either cut Finely diced chunks (top), Thinly sliced (middle)or Grated (bottom). I prefer them thinly sliced. I slice the apples super thin, and then I run through them again with a knife to create bite-sized but thin pieces of apple. This allows you to get those pockets of juicy apples with each bite.

    Add the wet ingredients to the dry ingredients and combine them using a spatula or an electric whisk.

  5. 5

    To the above mix add the vanilla essence, white vinegar, salt and sugar.

  6. 6

    Once mixed well, add the cut apples and nuts of your choice and combine well.

  7. 7

    Add the mix to a greased loaf tin. Tap the tin to release any trapped air bubbles.

  8. 8

    In your preheated oven, place the loaf tin and set it to 180 degrees and cook for 30 mins. Poke the loaf with a skewer or toothpick to check if cooked.

  9. 9

    Once done, wait for it to cool down and cut into slices.
