Olives are small fruits that grow on olive trees (Olea europaea). They belong to a group of fruit called drupes, or stone fruits, and are related to mangoes, cherries, peaches, almonds, and pistachios.
Olives are very high in vitamin E and other powerful antioxidants. Studies show that they are good for the heart and may protect against osteoporosis and cancer.
Here I have cooked a sweet and Sour chutney with some bengali traditional whole Spices and olives. Let's cook 😊.

Clean and wash the green half ripen olives and drain water from it. Take it another bowl. Mix, salt, turmeric powder, chat masala, mustard seed paste, ginger and garlic paste, red chilli powder, Coriander powder and five spices roasted powder into it.

Give it a perfect mix using your hand. Now keep it aside covering the bowl for 24 hours.

In the next day, take a frypan, put some mustard oil into it and heat it on stove. Put whole five Spice/ panch phoron into it with whole dry red chilli, Cardamom and bay leaf. Stir Fry it for 1 minutes.

Now, put the olives with spices mixture into it with white vinegar and whole garlic. Stir Fry it for 20 minutes covering the pan in a medium high flame.

Now, put sugar into it and cook it for half an hour in a medium low flame. When the chutney is 100% cooked, stop the flame immediately.

Sweet and sour spicy olive chutney is ready to serve. Enjoy.
