First, in a pan heat 2 tbsp of ghee, keep the flame low then add edible gum and roast till it puff ups and turns golden in color.Take it out in a bowl/plate.

Now add remaining ghee into the pan, add flour and roast till it gets aromatic or till u see the slight change in colour and ghee start to leave the sides. Transfer to a plate.

Meanwhile, melt the crushed jaggery in the microwave for 30 secs or in a pan on medium heat.

Now add all remaining ingredients - roasted - crushed gum, cardamom powder,sesame seeds, finely chopped cashews and almonds, dry ginger powder and coconut powder. Mix everything well.

Next, add melted jaggery and again mix properly.

Mixture is ready, now take a small portion from the mixture and bind it to the shape of pinni or laddu. Make all pinni similarly. Delicious healthy bajra pinni is ready. store in an air tight container.
