Steps

First take a kadhai then poured Oil, Add chopped Vegetables (Spinach, Greens, Potatoes & Pumpkin). Sprinkle Salt as you need for test & roast it for 10 min in low flame. Now keep it aside.

Again take a kadhai then poured 2-3 Tbsp Oil, add Sugar, when it looks red add jeera seeds, then add the paste (Zeera, Chilli, Tomato, Ginger); And mix it, cook it for 5 minutes in low flame, then add all the spices(Haldi powder, Salt, Dhaniya powder, Curry powder) and mix it well for 5-10 mins..

Now add Roasted Vegetables and mix it well again for 5-10 minutes, Next add some water as per you needed, cook it only for 20 minutes in medium flame. Check the Vegetables cook perfectly. Now it is ready to serve with Rice...
