Ingredients

2 servings
  1. 1 tbspolive oil/ coconut oil
  2. 4spring onions, chopped
  3. 2-5 cmchunk of ginger(depending on how you feel about ginger), peeled and grated/ finely chopped
  4. 1-2 handfulsshitake mushroom, sliced or torn
  5. 100-150 gfirm tofu, pressed and drained and cut into cubes
  6. 2-3 tbspsesame seeds
  7. 750 mlhot water
  8. 2-3 tbspwhite miso paste
  9. 1-2 headstatsoi or komatsuna or pak choi, torn into small pieces
  10. Some shichimi if you have some or chill flakes - optional
  11. Enough soba for two

Steps

  1. 1

    Cook the soba according to the packet. When it’s ready, drain and rinse in cold water and set aside.

  2. 2

    In a jug, mix the miso and water until the miso is dissolved.

  3. 3

    Heat the oil in a pan on medium-hot heat. Add the spring onions and ginger. Cook for 2 mins.

    Add the mushrooms and sauté for 2-3 mins.

    Add the tofu and sesame seeds. Sauté for 1-2 mins.

    Turn the heat down to low. Add the miso/ water. Stir the tatsoi through and leave for 1-2 mins.

    You can add the soba to the tofu/ veg soup before serving. Or put the soba into bowls and then add the soup. Sprinkle with shichimi. Enjoy 😋
