Tres Leches Cake

A sponge cake soaked with three kinds of milk creams and decorated as you like becomes a delicious cake. I didn't have evaporated milk on hand, so I used coconut milk instead, and it turned out really good!

A sponge cake soaked with three kinds of milk creams and decorated as you like becomes a delicious cake. I didn't have evaporated milk on hand, so I used coconut milk instead, and it turned out really good!

Bake a sponge cake, either the classic sponge or the yogurt version. As soon as it comes out of the oven, turn it out into a larger pan lined with parchment paper. Poke holes all over the cake so it can soak up the milk mixture.

While the cake is baking, mix the three milks together in a blender or by hand.

Pour the milk mixture evenly over the cake. If any liquid runs off the sides, collect it in a small bowl and pour it back over the cake until it is fully soaked.

Refrigerate the cake for a while. Then, invert it onto a serving platter and decorate as desired.

I decorated mine with a chocolate ganache (see recipe: http://www.mis-recetas.org/recetas/show/35566-ganache-para-cubrir-tartas) and then made a mascarpone chantilly cream.
