Spinach with Chickpeas and Potatoes

Peel and cut the potatoes into bite-sized pieces. Boil them in salted water until tender, then drain and set aside. Drain the chickpeas.

In a skillet, heat a little olive oil over medium heat. Add the garlic cloves, peeled and sliced, and sauté until they start to turn golden. Add the potatoes and chickpeas, stir to combine, and cook for a couple of minutes. Add a pinch of salt and 1 teaspoon of hot paprika. Mix well and cook for another couple of minutes.

Add the washed and well-drained spinach. Stir to combine with the other ingredients, cover the skillet, and cook for a few minutes over low heat.

Adjust salt to taste if needed and serve hot.
