I switched from beef pho to chicken pho today—it's even better on a rainy day.

Rinse the chicken and let it drain. Place it in a pot with smashed ginger, lemongrass (smashed and cut into pieces), and charred shallots and onion.

Add 8 1/2 cups water (about 2 liters) to the pot and simmer until the chicken is tender, about 45 minutes. Remove the chicken, let it cool, then shred or chop into bite-sized pieces.

Add onion, green onions, chicken, and blanched pho noodles to a bowl, then ladle the hot broth over the top.
