Ingredients

Serves 4 servings
  1. 2chicken leg quarters or half a chicken
  2. 3 stalkslemongrass
  3. 1small piece of ginger
  4. 3star anise pods
  5. 2small cinnamon sticks
  6. 3shallots
  7. 1onion
  8. Green onions, bean sprouts, culantro, Vietnamese coriander, lime
  9. Pho noodles

    Rinse the chicken and let it drain. Place it in a pot with smashed ginger, lemongrass (smashed and cut into pieces), and charred shallots and onion.

    Add 8 1/2 cups water (about 2 liters) to the pot and simmer until the chicken is tender, about 45 minutes. Remove the chicken, let it cool, then shred or chop into bite-sized pieces.

    Add onion, green onions, chicken, and blanched pho noodles to a bowl, then ladle the hot broth over the top.
