Ingredients

  1. 1 cupBasmati rice, soaked in water for 30 minutes
  2. 250gms. prawns, deveined & cleaned
  3. 1potato, cubed
  4. 2 tbsp.oil
  5. 2 tbsp.ghee or as preferred
  6. 2-3bay leaves
  7. 2" cinnamon stick
  8. 3-4green cardamoms
  9. 6-7cloves
  10. 2star anise
  11. 2pathar ke phool
  12. 1onion, sliced
  13. 1 tbsp.garlic, sliced
  14. 1 tbsp.ginger, sliced
  15. 3-4green chilies, slit
  16. 1 cupmilk
  17. 1/2 cupwater
  18. 1 pinchsaffron
  19. to tastesalt
  20. 1 tsp.turmeric powder
  21. 1 tsp.garam masala powder
  22. 2 tbsp.fried onions
  23. 1 tsp.coriander powder
  24. handfulcoriander-mint leaves
  25. 1 tsp.cumin powder
  26. 1 tsp.red chili powder

Steps

  1. 1

    Soak the saffron in the milk and keep aside. Marinate the potatoes & prawns separately with a pinch of salt and turmeric powder for 10 minutes.

    Add the ghee to the pan and temper with cinnamon, cardamoms, cloves, bay leaves, star anise and pathar ke phool.

    Saute for a few seconds and then add the onions, garlic, ginger and green chilies. Fry on a medium flame till light brown.

    Now add all the dry spices (except salt) and saute well.

    Add the rice and continue to stir fry for 2 minutes.

    Then add the fried potatoes, fried prawns, saffron milk, water, fried onions, salt and chopped coriander-mint leaves. Pressure cook for 2 whistles. When it cools down a little, fluff it up with a fork.

    Serve with raita.
