This is a light but delicious way of preparing rice which goes very well with fish fry or any dry chicken. Also goes very well with lentils (dal), vegetables or any other non-veg preparations. Lemon juice adds a tangy taste and fresh coriander makes it all the more flavourful.

Heat oil and ghee in a pressure cooker. Sprinkle cumin seeds. When they crackle, add rice. Lightly fry rice. Add salt and toss Add water. Close cooker and pressure cook 2 whistles. Let it rest in pressure for 5 minutes. Open the lid after 5 minutes. Allow it to absorb moisture in rice without stirring for few minutes.

Sprinkle lemon juice and chopped coriander. Toss and serve hot with fries, dal, vegetables, chicken or any other non-veg preparations.
