Khaari Bhaat

Khaari bhaat is kutchhi pulao or biriyani that is made on regular basis in every bones. this one is made with basmati rice or regular rice with lots of green veggies and Indian whole dry spices. You can add veggies according to your taste. In authentic one they add only onions, potatoes and tomatoes with lots of garlic chilli ginger paste. Moreover you can add peanuts too.

Wash rice twice and soak in 3 cups water. Chop onion tomatoes and get the chilli ginger garlic pate and whole dry spices ready.

In a pressure cooker add 2 tsp oil and 1 tsp ghee and add mustard cumin seeds and all whole spices. When crackles add onion and potatoes and ginger garlic chilli paste. Mix well and cook for 2-3 mins. Now add in chopped tomatoes and combine well. When tomatoes are soft add in red chilli, turmeric and coriander powder. Mix well and saute for 2 mins.

Add in rice with 3 cups water and bring it to boil.

Cook for 3-4 whistles and serve hot with Kutchhi drink i.e buttermilk.
