First, add 2 tablespoons of ghee to 2 cups of all-purpose flour and mix well. Gradually add warm water and knead into a soft dough; you will need less than 1 cup of water. Cover and let the dough rest for 20 to 25 minutes. While the dough is resting, cook the soaked chana dal in a pressure cooker for 4 whistles until soft. Drain the water and grind the dal into a fine paste using a blender.

After grinding the dal, mix it with 130 grams (about 2/3 cup) of sugar or jaggery in a glass bowl. Microwave for 4 minutes so the mixture dries out. Mix well to make the filling for the puran poli. By now, the dough will be ready. Divide the dough into small balls, fill each with the chana dal mixture, and roll them out into thin flatbreads. Cook each on a skillet with ghee until golden brown on both sides.

Serve the hot, sweet puran poli with dal or ghee.
