Ingredients

  1. 1 cupcoconut flour or unsweetened shredded coconut, ground
  2. 1/2 cupgolden flaxseed meal or Canadian flaxseed
  3. 1/2 cupwheat bran
  4. 1/2 teaspoonsalt
  5. 1 teaspoonbaking soda
  6. 1 teaspoonbaking powder
  7. 1 teaspoonxanthan gum
  8. 1/2 cupcoconut milk or almond milk
  9. 3eggs
  10. 1/2 teaspoonlemon juice
  11. 1 teaspoonpsyllium husk

    Mix dry ingredients.

    In a separate bowl, beat eggs with milk and lemon juice.

    Add the egg mixture to the flour mixture.

    Add 2 tablespoons of olive oil, coconut oil, or vegetable oil of your choice and two tablespoons of seeds of your choice (sunflower, almond). Personally, I use my seeds soaked in chili oil (olive oil with dried chili to taste).

    Place in a silicone loaf pan or your regular greased pan. Garnish with sesame seeds.

    Bake at 370 °F (190 °C) for about 35 minutes. I bake it with hot air; in a regular oven, it may take a little longer.
