Rendang is known as one of delicious dishes in the world. It's originally from West Sumatra, Indonesia. Rendang is piece of meat which slowly cooked and braised in coconut milk and spice mixture. This dish is usually served with rice or ketupat (rice dumplings woven in palm leaves).

The recipe I wrote is from my mom. She usually makes rendang in special occasion such as Eid al-Fitr or her children back to visit her.

Ingredients

4 hours
  • 1 kgbeef (chuck beef)
  • 3bay leaf
  • 3kaffir lime leaf
  • 1 inchgalangal (bruised)
  • 2 stalkslemongrass (bruised)
  • 2 Lcoconut milk
  • 1 Tbspsalt
  • Blended Spices
  • 5shallot
  • 5 clovesgarlic
  • 5cayenne pepper (you could add or reduce the amount)
  • 4candlenut
  • 2 inchturmeric
  • 1.5 inchginger
  • 1 Tspnutmeg powder
  • 1 Tspcoriander powder

Steps

  1. 1

    Prepare all ingredients. Cut beef into 4x4x4cm cubes. Toss the blended spice ingredients to blender. Give small amount of water to blender.

    Heat the wok with medium fire. Add coconut milk, spice mixture, bay leaf, kaffir lime leaf, galangal, lemongrass and salt. Mix it well. Put beef chunks after the sauce is boiled.

    Slow cook beef with low heat. Simmer it for approximately 4 hours until coconut milk turn into oil and the beef becomes dark brown and tender. Keep stir the beef every 10 minutes while simmering it, so it won't burnt.

    Some say the more you reheat the beef on the next day, the more tasty it gets.
