Hmmm nothing to report…other than I always have a lot of coconut cream on hand for making non dairy CREAMi ice cream…and it’s summer so in my pursuit of alchoholic beverages - I just want a pina colada on hand. Hmmm I think next time I will make a coconut creami pineapple milkshake type of Pina colada. Stay tuned…

We had probably the best Piña Coladas either one of us had ever had while on our honeymoon in the Virgin Islands. Wanting to recreate what we consumed and not satisfied with the plain ole rum+crème de coconut+pineapple juice+ice recipe, I hunted around and made my own conglomeration of various recipes I found.My hubby says it still tastes more smoothie than slushy (but beware it does pack somewhat of a kick!), but definitely resembles the creamy concoction we got in the Caribbean!Let me know what you think! And if you add your own spins, or find something else to work out better, I'd love to know! Still perfecting this recipe till we recreate our honeymoon vacation Piña Coladas!
