We had probably the best Piña Coladas either one of us had ever had while on our honeymoon in the Virgin Islands. Wanting to recreate what we consumed and not satisfied with the plain ole rum+crème de coconut+pineapple juice+ice recipe, I hunted around and made my own conglomeration of various recipes I found.

My hubby says it still tastes more smoothie than slushy (but beware it does pack somewhat of a kick!), but definitely resembles the creamy concoction we got in the Caribbean!

Ingredients

  1. 5 ozcoconut rum
  2. 2 1/2 ozregular rum ('light')
  3. 2 1/2 ozspiced or aged rum
  4. 6 ozcrème de coconut (i.e. coconut cream)
  5. 3/4 cuppineapple chunks
  6. 4 ozpineapple juice
  7. 1 1/2frozen medium bananas (I experimented around w/this- for us, 2 medium was too much, and 1/2 large wasn't enough)
  8. 3/4 cupvanilla ice cream or froyo (i.e. 3 scoops)
  9. Optional (but I used in my recipe in lieu of 3 scoops of the same frozen treat)
  10. 1/4 cupvanilla froyo (i.e. 1 scoop)
  11. 1/4 cupvanilla ice cream (i.e. 1 scoop)
  12. 1/4 cuppiña colada ice cream
  13. Optional
  14. 15ice cubes (or however many you need to get the consistency you want)
  15. Topper (optional)
  16. 1whipped cream (we used soy whip - just as tasty!)
  17. 1ground cinnamon (to garnish)
  18. 1maraschino cherry

Cooking Instructions

    Measure out and dump all ingredients in the blender.

    Blend! Since our blender is somewhat older, I added the ice cubes to make it more of a slushy than a smoothie, but the end result is creamy nonetheless!

    Top with whipped cream, sprinkled ground cinnamon, and a maraschino cherry. Add a straw and enjoy!
