Frozen Piña Colada

Piña Colada is a fancy drink you can only have at the bar? Not anymore!
Just using simple ingredients, you can make this Frozen Piña Colada. You have a choice of with or without alcohol. Mild or strong.
This would be a perfect drink for hot & humid summer! It could be a tasty dessert to refresh your mouth after your meal!

Cooking Instructions

(In advance) Cut pineapple and keep in freezer for a while to make it frozen.

(In advance) Pour coconut milk in a pan, add coconut oil & honey and mix.

(In advance) Stew with low heat. Keep stirring gently with a spatula.

(In advance) Pour this mixture in a container and cool it down.

(In advance) Add Bacardí carta blanca and keep in the refrigerator for few hours.

Put frozen pineapple, ice cubes, coconut milk & Bacardí carta blanca mixture in a bowl.

Blend it well.

Pour in a glass and place some mint leaves for a nice presentation! *If the glasses are chilled, the frozen drink will last longer!

We had probably the best Piña Coladas either one of us had ever had while on our honeymoon in the Virgin Islands. Wanting to recreate what we consumed and not satisfied with the plain ole rum+crème de coconut+pineapple juice+ice recipe, I hunted around and made my own conglomeration of various recipes I found.My hubby says it still tastes more smoothie than slushy (but beware it does pack somewhat of a kick!), but definitely resembles the creamy concoction we got in the Caribbean!Let me know what you think! My husband wanted to eat a summer-style cake, so I made one that suited his tastes by referring to a few different recipes I found in an American cooking magazine.The coconut will burn easily, so be careful. The coconut in the photo was burned slightly in Step 1. You can use plain yoghurt instead of sour cream. It will have a lighter finish. Drain the pineapple well before adding it.
