Ingredients

  • Fordough-
  • 2 cupsrefined flour /maida
  • 1 tspsugar
  • 1 tspbaking soda
  • 2 tbspmilk powder
  • 1 tspsalt
  • 1/4 th cupfresh curd/dahi
  • 2 tbspclarified butter /ghee
  • As requiredWarm water
  • For paneer stuffing:
  • 1 cupgrated paneer
  • 1/2 cupchopped onion
  • 1 tbspchopped coriander leaves
  • 1 tbspchopped mint
  • 1 tspgrated ginger
  • 1 tspanardana
  • 1/2 tspchat masala powder
  • 1 tspchopped green chilles
  • 1 tspchilli powder
  • 1/2 tsproasted cumin powder
  • 1 tspajwain
  • 1 tspcrushed coriander seeds
  • 1 tspgaram masala powder
  • to tasteSalt
  • For garnishing-
  • As requiredChopped coriander and mint
  • As requiredOil and butter for frying naan

Steps

  1. 1

    Take a bowl add all ingredients listed below paneer suffing and mix everything well and keep aside

    In another bowl add all ingredients listed below dough.knead the dough for atleast 10 mins till the dough is smooth and soft & it isn't sticking on your hands, cover the dough with clean moist cloth,rest it for 1 hr

    After 1 hr take out the dough from moist cloth,knead it slightly and remove any air present in the dough.

    Knead the dough to make circle, now apply ghee on opposite sides of dough,sprinkle some maida and then fold it. Repeat the process, the idea is to spread the ghee in layers in the dough. Repeat the process for one more time. Folding dough will give u flaky layers.

    Make overlapping folds, pinch and seal as shown below

    Cut into equal pieces with knife,tuck and roll into dough balls, cover for 15 mins

    After 15 mins take them out and spread maida on kitchen counter place dough and roll thin edges and thick center & place the paneer filling and seal dough properly

    After adding paneer filling in the dough, flatten it with your hands, use ghee to flatten the dough with your hands,now spread some chopped coriander & mint leaves on one side of naan and press it so tht leaves are sticked to naan properly

    Sprinkle some water on the other side of the naan so that it sticks on the tawa, when it's done place carefully naan on hot tawa

    After 2 mins hold the tawa side & put it upside down the flame, carefully cook all the sides of naan by holding the tawa upside down, keep the flame medium,apply oil or butter and fry evenly on both sides

    Once it's fried nicely from both sides transfer it on plate and crumble naan with ur hands

    You will see the beautiful chur chur (layers) of the naan,pour an ample amount of butter on the naan & serve with curd or Tamarind chutney
